Bresaola originated in Valtellina, a valley in the Alps of northern Italy’s region; it is a cured and air-dried beef, spiced and aged 3 months. Our Tempus Bresaola is from a speciality farm in Bedford, UK, using a salmon cut of dairy beef. It is beautifully tender and silky, and the tasting notes show a deep and rich pronounced beef flavour with a profile of star anise, coriander and cardamom.
